Lively bright acidity with a finish that suggests earth, mineral, rich soil and under ripe red fruits. Lovely.
This is the style that would work so well with pork and white meats. Roast chicken, pork tenderloin with cherries, duck, etc. Also good with tomatoes, especially with grilled whole fish with a set of roasted tomatoes, olives and capers!
