Big spicy, ripe black and red fruit. This one smells like warm cherry pie, sprinkled with cinnamon and served with a slab of bing cherry ice cream and julienned sage and mint. Lush and mouth filling. Sexy, bright and confident. This is like a classic red Burgundy, offering earth, soil and terroir, with a dose of tart cranberry, baked cherry, truffle and morel mushrooms.
This has the longest finish of the bunch, showing bright, rich red cherry, fat raspberry, pastry, earth, truffle and roasted meats. Would be killer with lamb stuffed with anchovies, rosemary and garlic, or, for a crazy unique experience, drink this with a bowl of gnocchi in cream sauce and lightly sautéed morel mushrooms and a saddle of duck. Damn.
