Full bodied and lush with complex spices and an everlasting long finish of fruit, smoke and vanilla. A pure hedonistic pleasure; smoke, bacon fat and truffle with sauteed hen of the woods mushrooms and luscious texture.
This would pair well with fish dishes like skate wing, bacon wrapped shrimp or scallops, duck risotto, gnocchi, or pork chops, lamb chops or a perfectly cooked piece of filet mignon.
