Recipe: Spring Pea & Pistachio Aillade with Orange Blossom Whipped Fromage Blanc with Amycas White Wine

1 Baguette, sliced, drizzle with olive oil, and toasted

Spring Pea & Pistachio Aillade:

  • 1 cup fresh peas or frozen peas defrosted
  • 1/2 cup roasted pistachios
  • 1 /2 bunch tarragon
  • 1/2 bunch mint
  • Juice of 1 lemon
  • Kosher salt
  • Olive oil

In a food processor combine the peas, tarragon, and mint.  Add a pinch of salt and pulse a few times.  Add the lemon juice.  With the motor running add enough olive oil to create a wet consistency.  Add salt to taste.  Set aside while preparing Fromage blanc.

Fromage Blanc:

  • 1 cup fromage blanc or goat cheese
  • 2 teaspoons orange blossom water
  • 1 tablespoon orange zest
  • Juice of 1 orange
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
  • Olive oil

In a food processor combine the cheese, orange water, zest, juice, and salt.  While the motor is running drizzle in enough olive oil to create a smooth consistency.

For plating spread the fromage blanc on toasted baguette slices, top with aillade.  Drizzle with a little olive oil and a pinch of sea salt.  Top with micro greens if desired.

Serves 6
