Pepper crusted tuna

Monthly Wine Tasting and Food Pairings

Ingredients:
 2 Limes, juiced
 ¼ cup Cilantro, rough chop
 2 ½ tbsp Soy sauce
 1 tbsp Sesame Oil
 White sugar
 2 Cloves of garlic, grated
 1 ½ tsp Garlic, minced
 1 tsp Ginger, grated
 ½ Serrano pepper, thinly sliced
 2 8oz pieces of tuna
 1 ⅛ tsp Black pepper
 1 ⅛ tsp Salt
 1 tbsp Olive Oil
 2 tbsp Butter
 2 cups Snow peas, blanched
 1 Avocado, thinly sliced
Directions:

In a bowl combine the cilantro, ginger, grated garlic, lime juice, soy sauce and serrano. Mix well.

Season the tuna with salt and pepper.

Heat a sauté pan with olive oil. Gently sear both sides of the tuna until golden brown, about 1 minute per side. remove from the heat and let rest.

In a small pan heat the butter and the minced garlic. Add the snow peas and cook for 30 seconds, or until warm.

Place the snow peas and sliced avocado on a plate with the tuna on top. Drizzle the dressing over the top of the fish. Enjoy!
