Pair with a warm bacon cabbage salad, with bacon lardons, sauteed kale all tossed in a citrus bacon vinaigrette and topped with candied pecans.
Chef
A texturally compelling wine from a slightly cooler vintage, the 2019 Temperance effuses notes of cranberry, rhubarb and dried rose petal. On the palate this wine is lithe and elegant, with a juicy entry, fleshy mid-palate and a mineral red fruit finish with superb length.

Winemaking Notes
2019 Vintage:
A wet, but warm spring with a few mild frosts during late April and fewer than average heat spikes.
Near-record precipitation amounts during late June and early July brought increased disease pressure to the region.
The vintage will be remembered for the early rains in September and rapid cool down into October which challenged harvesting decisions.
The cool vintage came largely from substantially lower maximum temperatures while minimum temperatures were near average to slightly above average.
