Shrimp Lettuce Wraps with nước chấm sauce

In a small bowl, combine the jalapeno, water, sugar, garlic clove, fish sauce, rice vinegar, and 2 tbsp of lime juice, and set aside. This will be the dipping sauce.
In another bowl, mix together black pepper, salt, paprika, cayenne, garlic granules, and chili powder.
Heat a sauté pan on the stove. Add the olive oil, then add the shrimp and 1 tbsp of the spice mixture. If you want a little more spice, you can add more. Cook until the shrimp is cooked through. Juice the remaining lime over the top of the shrimp while they are still in the pan.
When you are ready to eat, use the lettuce leaves as the base and add the cabbage, bean sprouts, mint, peanuts, and shrimp. Finish with a drizzle of the dipping sauce, and enjoy!
