What a fun and busy week. It rained a lot but we need it so no complaints! Rain brings beautiful “Jimbows” like the one above that we saw on Tuesday. (Photo credit to Christy!) Chef Norma crafted a delicious meal for our Harvest Dinner on Friday that delighted our guests. Beyond Brooks was packed full of great content yesterday with our guests from Smith Tea. We could have talked for hours! I am really looking forward to seeing many of our Wine Club Members this afternoon for our wine and cheese pairing event with Rogue Creamery.
CHARCUTERIE AND SPICE
Last summer, the team and I had the pleasure of touring Olympia Provisions facility where they make all of their amazing charcuterie products. While the meat curing rooms weren’t the most appealing to smell, I could have stayed in the spice room for a very long time! I am super excited to be partnering with Olympia Provisions for the December Beyond Brooks!
Salumist Elias Cairo, grew up first generation Greek-American with a father who made charcuterie at home. It was in Europe that he rediscovered the art of curing meat and found inspiration in the markets and mountain towns of the old world. He has since brought this craft to Oregon and is leading the way for sourcing environmentally regenerative, humanely-raised pork.

THE GARDENS IN NOVEMBER
So many coworkers ask Shannon, our gardener extraordinaire, what she does during the winter. Rain or shine, June or November, Shannon has a lot going on. I am super excited about the garden expansion plans she presented to me this week. We will be expanding our vegetable gardens for better crop rotation, adding a berry garden and a greenhouse! We will also be adding to our chicken family!
This will be my last week in Oregon until January. I am looking forward to it!
