Mix all the spices together in a bowl.
Rub the spice mixture all over the pork.
Wrap the pork in parchment paper and then in foil.
Place in a hotel pan and cook at 300 for 5 hours.
Let cool completely in the foil.
Cut into desired pieces and fry the pork skin side down to crisp the skin.
Serve immediately.
